The Ramly Burger, also known as the Burger Ramly, is a Malaysian burger created by Ramly Moknin popular in Malaysia and Singapore. Though the term "Ramly Burger" may refer to any of the hamburgers sold in a Ramly Burger stall, it most commonly refers to the Ramly Burger Special. While the amount and type of ingredients vary greatly depending on location, a typical Ramly Burger consists of a beef or chicken patty, margarine, onions, an egg, cabbage, mayonnaise, and Worcestershire sauce. This list is subjective, however, as Ramly Burgers are famous for being highly customizable. The Ramly Burger is distinctive from most other hamburgers due to the unique way in which the ingredients are served. Rather than the usual method of stacking the ingredients within the bun, the patty in the Ramly Burger is first covered with the desired condiments, then wrapped in a thin layer of egg. The end result is packet-like and enhances the texture of the burger while simultaneously reducing mess from the condiments.


Despite its popularity among Singaporeans, the import of Ramly Burger into Singapore is prohibited, along with all other Malaysian beef products. However, several stalls have smuggled the burger, albeit illegally, into the country. In particular, Ramly Burger stalls are rampant in pasar malams, which are harder to track due to their itinerant nature. Preparing the patty

  • Melt margarine on a hotplate.
  • Fry chopped onions and place the beef or chicken patty on top.
  • Different stalls use different seasonings for flavour. These include fish or chicken curry powder, oyster sauce, Maggi seasoning, sweet soya sauce, mayonnaise or pepper.
  • Slice the half-cooked patty into half its thickness and cook the inner sides.
  • For an egg-wrapped Burger Ramly Special, break an egg and spread it into a thin layer the size of a plate.
  • Place patty in the middle and fold the egg over it on four sides.

Preparing the bun

  • Slice a hamburger bun into half, coat each side with margarine and toast the two halves on a hotplate.
  • The typical Western burger is garnished with lettuce and tomato. Use sliced cucumbers, shredded cabbage and carrot for a Ramly burger. Cheese is optional.
  • Top up with sweet chilli sauce and mayonnaise.

What differentiates a Ramly from a normal burger is, most obviously, the way the patty is cooked in an egg pocket.
I saw the way the vendors do it: cracking eggs on the hot skillet first, mushing the yolk with the white, with the back of their ladle, and then plopping the patty in the middle of the madness.
When the egg is about done, they flip up its corners to pocket the patty, and flip the whole packet around a few times before depositing it in a burger with sliced cabbage, carrot (though ours seemed to consist of lettuce and tomato!), a ton of mayo, and sweet chilli sauce.
