History

The modern Dutch oven was said to have been invented by Paul Revere, the 3-legged model with the rimmed lid was used as early as the English colonies in North America. The cast-iron cookware was loved by colonists and settlers because of its versatility and durability. It was able to be used for boiling, baking, stews, frying, roasting, and just about any other use. The ovens were so valuable that wills in the 18th and 19th centuries frequently spelled out the desired inheritor of the cast iron cookware. Even Martha Washington's will (wife of Pres. George Washingon) specified the inheritor of her cast iron cookware.

Americans traditionally season the inside surfaces like cast iron frying pans and wipe them clean rather than scouring them. The seasoning process is performed by coating the bare metal oven with oil or shortening. This is then baked onto the surface at approximately 350-375 degrees for one hour. The oven is allowed to cool to the point of being warm to the touch. At this time, a second coating of oil or shortening is applied. The oven is baked by the same process. Of note, seasoning can be done indoors if the smoke and odor is not problematic, or outdoors in a barbecue grill or other heat source.
